Only in the way I can agree with, I cook what I can perfectly satisfy. It is my cooking philosophy!
Although that is right whatever it may concern, I never lend only a name or put its own photograph bold on a package and saying "Well, let it a bit sweeten" is too bad chef's doing.That isn't "job", of course. I'm not sure that was dessert or not, but when I think about customer's feeling..., I cannot stand. Work out how to be deliciously eaten my dishes is my stance, my rule (no matter how small my photo is).
The "Hisama's Kitchen" lunch box selling now in "FAMILYMART" is the model. I always designed a menu with one theme, "how to be eaten boiled rice deliciously?" It is well said that Japanese people is becoming unlikely to eat rice, but I don't think so. I think good side dish which makes people to eat rice more deliciously is decreased recently. Then, for example, make adding taro glaze vividly to make eater to think "Wow, I want to eat this side dish with rice!" Make lunch box which can eat delicious rice while eating side dishes is one solution.
Same thing can be said about "Toukaken" in odawara's new lunch box. I use some kind of "magic" not only to its taste, but also its eater. A packaged station lunch box is not only eaten in a train. Even I take it home, when I eating it, it should remind me that region's scene. That's what station lunch box should be. Then, take too seriously about local special product's side dish which cannot gather now is nonsense. For example about Hakone, to appeal everyone's "Hakone" feeling is the best to make its station lunch box. Grandmother who lives in Hakone's home made lunch box for grand child; conger lunch box which fishermen's boss often eat..... To value that kind of concept is my rule.
Though I detailed its quantity, salt, soy sauce and mirin's prescription is delicately changed by fire power and heating times. Do not consider about that, saying "this is the recipe" and dispose it is better to carry out nothing at all. On that point, concept making (included marketing); device to eat is connected to design lunch box's taste involving actual spot's people. Many ideas come out at actual spot, like "Simmered dishes should be colored more if it's grandmother's homemade lunch box." That is what I aim at. Enjoy "meal" while enjoy its story. I put this idea to practical use for TV program. Lunch time hour, many housewife watches TV program while doing some another thing. To let them watch TV program, attract with sound (like radio's doing) is effective, I thought. Frying pan's roasting sound, frying sound. That sound let housewives watch TV "Sounds tasty."
If it says on boxing now, I think that there is nothing only a mere skirmish at the step to a world game. My dream is to be world level chef, and I want to open my restaurant on an excellent piece of land in Italy. As you know, Italian people are gourmet and good supporter of Japanese food (including its process). I want to surprise, entertain them with my dishes. After while when I came back to Japan, what kind of "hisama" will I be? I'm really interested in it.
Basically, I am "pretending cool". "Pretending cool" force to endure to the last by themselves, clench their teeth "there must be some solution". I'm not son of a respectable family, so there is only one way. Ready for it, bet my life, I will try.
